Eating a heart is probably not a literal translation but a metaphor. For example, [capturing the heart of the giant king resulted in the birth] or something. So, if we assume that Loki's wife, Angrboda, doesn't exist, and it refers to when Loki transformed into a female giant, it makes more sense.
